Ingredients

Scale
  • 8 thin slices of prosciutto, halved length wise
  • 2 medium peaches, halved, pitted and cut into 8 wedges each
  • Salt and freshly ground pepper
  • 16 basil leaves, cut into strips
  • 1 tbsp. olive oil
  • 4 oz of creamy blue cheese, crumbled
  • Aged balsamic vinegar, for drizzling

Instructions

  1. Lay the prosciutto slices out on a work surface. Set a peach wedge at the edge of each slice, season with salt and pepper and top with a basil strips, and crumbled blue cheese. Roll up the prosciutto to enclose the peaches.
  2. Heat a grill over medium heat. Brush the peaches lightly with olive oil. Grill peaches turning occasionally, until the prosciutto is browned and crisp, about 4 minutes. Transfer to a platter and lightly drizzle the peaches with aged balsamic vinegar and serve.
