Mamma Lo’s Hummus

The Best Hummus, I Have Ever Tasted!

When you grow up in a Lebanese family, someone is bound to tantalize your taste buds with delicacies inspired by the Middle East, especially Hummus. I am lucky to have experienced generations of Mediterranean, flavor makers.

Throughout the years I have eaten my fill of varied Hummus, a spread made from cooked, mashed chickpeas or other beans, blended with tahiniolive oil, lemon juice, salt, and garlic. Many ready-made brands are available in grocery stores, but I believe with all my heart that my Mom’s hummus is the best I have ever tasted. Give it a try and decide for yourself and remember to make it with love, it makes all the difference!

Using a food processor blend cumin, garlic, lemon, garbanzos, tahini until smooth and creamy, 2 cans of garbanzos should be drained and 1 should be used with juice. Taste and adjust seasoning with salt and pepper.

Fry pine nuts in a generous drizzle of olive oil until golden brown. Scatter nuts on top of hummus with the olive oil remaining in the pan. Sprinkle a little paprika on top of hummus, garnish with parsley.
