Ingredients

- 2 c of plain Greek yogurt
- 2 scallions
- 2 Serrano peppers, seeded and de-veined
- 1 thumbnail piece of ginger root, peeled and grated
- 1 garlic clove, peeled and grated
- 1 cucumber, peeled, seeded and coarsely grated
- 1 lemon, juiced
- 1 tsp. of cumin seeds
- 1 tsp. of black peppercorns
Instructions
- Peel the cucumber, cut in half lengthwise, using a spoon scoop out the seeds and coarsely grate.
- Thinly slice the scallions and finely chop the pepper and set aside.
- Toast the cumin and peppercorns in a dry sauce pan until fragrant, smash into a powder.
- Mix the grated cucumber with the yogurt, add the grated ginger and garlic, scallion, pepper, spices, salt and lemon juice and blend.
- Leave in the fridge at least an hour before serving.
